COOKED LOBSTER REHEATING INSTRUCTIONS 1. THESE LOBSTERS WERE COOKED BY US THE MINIMUM TIME TO BE CONSIDERED FULLY COOKED AFTER WHICH THEY WERE CHILLED IMMEDIATELY IN COLD SEAWATER AND THEN WITH ICE. WE DO NOT PACK COOKED LOBSTERS UNTIL THE CORE TEMPERATURE IS NEAR 32 DEGREES F. 2. WHEN THE LOBSTER IS RECEIVED YOU SHOULD CHECK THE STATUS OF THE REFRIGERANT AND RE-ICE IF NECESSARY OR OTHERWISE KEEP COLD. 3. COOKED LOBSTER CAN BE FROZEN SHORT TERM BUT IT WILL ALTER THE TEXTURE SOMEWHAT, OTHERWISE THE LOBSTER CAN BE EATEN AT LEAST FOUR DAYS AFTER SHIPPING FROM HERE. 4. THE FLAVOR OF THE LOBSTER IS GREATLY ENHANCED BY OUR COOKER AND THE NATURAL GULF OF MAINE SEAWATER. TO AVOID AN ALTERATION OF THAT FLAVOR, REHEAT THE LOBSTER FOR ABOUT TEN MINUTES IN A GOOD SIZED KETTLE WITH ONLY A HALF INCH OF SALTED WATER, BOILING VERY VIGOROUSLY AND TIGHTLY COVERED.
